Cauliflower Pizza Recipe / Keto and Gluten-free Friendly

Super simple and DELICIOUS!!! 

It's crazy how one head of cauliflower can make a whole sheet pan worth of pizza. That's enough to feed a good amount of people! The crust recipe calls for: 
  • 1 medium to large cauliflower 
  • 1/2 cup parm cheese 
  • 1/2 cup mozz cheese 
  • 1 egg seasoning (your choice. I added in galic salt) 

Preheat oven to 450. Cut cauliflower into pieces. Throw pieces into a blender and blend to created a "rice" like appearance. Do this in batches so you don't over crowd or turn the cauliflower into mush. When completed, place in microwave safe bowl and nuke for a good 5 to 7 minutes. Give it a stir halfway through. Once done, let it sit till it's cool.

After cooled, take some cheese cloth and in batches, wring put the water and place in a separate bowl. After you've completed that task, add in your cheese, egg and seasoning. Mix well. Place "dough" on a cookie sheet lined with parchment paper. Flatten it out evenly across the pan and then place in the oven for about 10 to 15 minutes or just until it's golden brown. 

Take the crust out, put on your sauce and toppings and place back in the oven for another 5 to 8 minutes. Get that cheese to melt! Now that that's done, take it out, cut it and eat!
