Lately I've been experimenting with food to see what I can make that's healthy and better for the family. This one was pretty much a "let's " replace the norm" with everyday ingredients and then add in other things instead. I mean, it doesn't hurt to play around in the kitchen. That's how ya learn, right!? Here's what you'll need:
- Large shrimp - cleaned, deveined, and tail on
- Coconut Flour
- Eggs
- Unsweetened shredded Coconut
- Old Bay Seasoning
- Salt
- Pepper
- Paprika
- Garlic Powder
- Pam cooking spray
Place the flour, egg, and coconut flakes in separate bowl. So 3 bowls, one ingredient each. In the bowl with the flour, add in all the spices listed. Add what you feel works for you. After that's done, mix the egg in the other bowl. There are no exact measurements for the ingredients because you will be adding to the bowls as you begin the Dipping process. Now for the fun part!
Take your shrimp (one at a time) and dip in the following order: Flour, egg, coconut. Place on a plate and repeat. The shrimp will have to be done in batches. When your plate is full, spray one side of the shrimp with the Pam.
Take shrimp and place Pam side down into the air fryer tray. After it's all filled, spray the rest of the shrimp with Pam. Doing this helps prevent it from burning. Cook at 380 degrees for 5 minutes on each side. Repeat until all shrimp is done! I will note that the breading is a wee bit dry, so use your favorite Dipping Sauce and it makes it even better!!
